Please advise

I have watched the video of Paul making ganache. He says to heat the cream for 10 minutes in the microwave? Is that correct or is it an error. If it is for 10 minutes, what heat setting is used as the cream coming out of the microwave has clearly been boiling.

Hi clan

I think this may be an error. Just bring the cream to the boil as you would in a normal way whether in the microwave or in a saucepan, wait a few seconds and pour over the chocolate. It can sometimes be difficult to see cream boiling in the microwave so keep an eye that it doesn’t boil over. It takes a couple of minutes depending on the amount you’re boiling. If you’re boiling in a saucepan give the cream a stir every now and then so it doesn’t catch and burn.

Edit I’ve just watched the ganache tutorials, Paul is using large quantities of chocolate and cream and an 800 watt microwave so his timing for that microwave is correct. He does also say ‘or until it comes to the boil’. His timing is a guide as microwaves like ovens differ and individual judgement will give best results. Hope this helps. x
