Paul Hi,

I absolutely love your poka dot handbag cake and am going to attempt to make for an 18th birthday. Is it ok to use a fruit cake as oppose to a sponge cake?

Hi Diva

It’s fine to use fruit cake so long as it is a mature one. Fresh fruit cakes tend to crumble on carving and you might end up with chunks of fruit falling out. The gold fish cake tutorial teaches how to cover fruit cake with marzipan and icing. Hope this helps.
