raspberry conserve

i have made a raspberry conserve and added some cornstarch to thicken it. I need it to be a bit thicker as i am using it between cake layers with buttercream. Can i put it back on the stove, bring to a simmer then add a bit more cornstarch mixed with a little water to thicken it up??

Hi elaine77

I don’t see why not. I’ve done it with curd, so it should be fine. Just remember that it thickens as it cools, go careful how much cornstarch you use.
You’ll need to cook it enough to cook the flour taste out. ?
