Is the Dr Oetker wafer paper the same as Rice paper?
If the same which side of the paper do you stick to the cake please.

There isn’t really any difference between the two. Wafer paper is made from potato starch and rice paper from the pith of the rice plant. They look and behave in exactly the same way. In the Crystal Palace cake tutorial Paul says not to worry which side to use. In fact the two different textures adds more interest to the overall look of the cake. You can use either side, just don’t over wet it because it can becomes crinkly and sticky.
