Reheating ganache – how much at a time?

Hi, I’m planning on filling and coating two rounds, 6inch and 9.5inch (all I had!) with milk choc ganache tonight.

My ganache is rock solid and I made the quantity per the calculators for both cakes.

In the video, Paul only reheats a tiny amount. Is this how I should reheat, rather than doing the whole bowl? If so, are these smaller portions for each stage? e.g. First portion to do the filling, then reheat more to do the sides, then more for the top etc?

Feeling a bit stressed as my cakes were out of the freezer too long before I got a chance to split in half and it has crumbled quite a lot!

Yes you can use a regular box as long as it is clean and without odour. Perhaps line it with some foil or parchment paper first. I’ve often resorted to using supermarket banana boxes for some of my cakes, but please do make sure the bottoms are strong enough before you attempt to carry a cake in one. The top of the box can be covered lightly with cling film to protect the cake.

To reheat the ganache, set the microwave on low to medium setting and heat for 30 seconds. Bring it out, try and stir. If it’s still rock solid keep doing this until it starts to loosen. As it begins to loosen, reduce the number of seconds of warming. Stiring after each warming is vital to prevent the ganache from burning or splitting. Warming ganache up can’t be hurried so take your time to bring it back to working temp. As you continue working, it may be necessary to keep warming the ganache when it begins to thicken again. Ganache should be a dropping consistency so be careful not to leave it in for too many seconds at a time. The crumbs can be rescused by mixing them with a little ganache and attaching them back to the cake. Please let me know if you need more information.

Thanks madeitwithlove, I was more confused about the quantity to reheat each time, but I’ve muddled through just trying to guess how much I’d need for each step (middle, sides, top) and only doing that amount each time.

Had another disaster in that the cartoon pig cake ingredients say a 12 inch drum is needed but that is no way big enough to fit the muddy puddle and 3 trees as well as the base tier. I’ve used a 14″ drum that I luckily had to hand but I now don’t have a cake box big enough as I bought a 12″ one and won’t be able to get another in time! Can I just use a regular cardboard box?
