Replacement for castor sugar

Hi,

I couldn’t seem to find castor sugar in market here in Canada. Can anyone tell me a suitable replacement for it.
I am about to make coffee walnut cake and recipe suggested castor sugar or brown castor sugar, what can I use instead which will not effect the flavor and texture.

Hi neha

Caster sugar is regular granulated sugar which has been ground down to make it finer. You could just place what you have in a food or coffee grinder and give it a whizz until the granules are smaller or you could us soft brown sugar. If whizzing granualted sugar be careful not to over grind as you’ll end up to something resembling confectioners sugar. I make flavoured confecioners and castor sugar as seen in my blog here:

I use a fine coffee grinder, very carefully. Soft brown sugar works well, I use it for coffee and walnut cake and chocolate cake. It has a more carmel flavour because it is unfined and definitely enhances the taste of the coffee especially if you add vanilla extract and some brandy syrup.. You have, options, hope they help.
