rich fruit cake (wedding cake)
do you think a 12″ x 16″ rich fruit cake would bake well in my 17″ wide oven or would i be better to bake two 12″ square cakes and join them together? many thanks

Personally I wouldn’t bake it in the 12×16 tin. I don’t think you’ll have enough room for heat circulation. Also you haven’t said how deep the tin is. If it’s shallow the cake would bake too quickly and burn. Rich fruit cake should be baked on low temp for much longer than sponge cakes. I feel your idea of baking 2 x 12″ cakes is a safer way to go. Other members may be able to advise differently, this is just my opinion.
I did try years ago,it was a mess all thelining paper burnt and the cake burnt around the edges.go for the smaller its safer
