Hi anna46

Models can be made up weeks or months in advance as long as they are stored with care. Once made place them in a ventilated cake box and store at room temperature or a cool room. Don’t use airtight containers as these make the paste sweat and not allow the models to try properly. If making sitting models, make them on a dummy or cake tin the same size as the real cake. This is to allow for skrinkage of the paste once it is dry so it sits accurately on your cake.
