scaling up/down cakes recipes

Hiya all, When you use the ready reckoner to scale a recipe do you round up or down the amount of eggs? For example im trying to scale a chocolate recipe to 10″ round and its saying 3.4 eggs etc would you round down to 3 or up to 4?

Hello Jade

If you use 4 medium size eggs it will give you the same weight as 3.4 large eggs. For useful information on egg sizes and conversion have a look at this link http://www.nigella.com/kitchen-queries/view/Egg-Sizes/3245
