shelf life of fondant covered cake
Hi, I love the chocolate cake recipe and would like to use it for a wedding cake. However, I need to ice it and transport it from London to Scotland1 week before the wedding. Would the chocolate cake stay fresh (no refrigeration) or should i only make fruit and madeira recipes. Thanks so much for any help.

The recommended shelf life for Paul’s moist chocolate cake is five days although myself and other members have found it to be longer. There is an answer from David Brice here http://www.cakeflix.com/questions/lengthening-the-shelf-life-of-cakes which may be of interest to you, please note his comment of storing conditions. I think for your time frame the cake will be fine especially if you drizzle some liqueur over the layers and add a little to the ganache filling if using.
