snowflake Christmas tree cake

Just watched the tutorial for the above cake and wondered whether you could do the same with fruit cake. My family are fruit cake fans and wouldn’t want a chocolate cake at Xmas. Can you carve fruit cake?

Hi gill65

I just wrote a long answer to you and the computer lost it all!! Start again.
Fruit cake can be carved just like any other. Take a peek at my answer about the maturity of the cake and knife to use here http://www.cakeflix.com/questions/santa
Use a nice heavy centre dowel to keep the stucture together. The only thing you have to keep in mind is that the ganache will not last as long as the fruit cake so you would need to eat it within a reasonable time.
Take a peek at extending ganache shelf life here:

If you’re not using ganache for sticking the cake together boiled apricot jam will help. Use only enough to make it tacky, too much will make the tower slide about. This happened to me last year with the santa stuck in the chimmeny cake. Marzipan and ice as normal.
