soaking fruit

hi, was intending to do pauls fruit cake, had my washed fruit soaking in brandy, paul says he soakes his fruit for 10 days, due to unforseen circumstances i was unable to bake my cake after the ten days so my fruit has been soaking longer, does it have any effect if you soak your fruit for a longer time or will it still be ok to use? thanks chrissy

Hi Chrissy

The longer fruit is soaked the more moist the cake will be. Soaking helps break down the tough fibres of the fruit. It can be soaked for a year in an airtight jar and turned or mixed every couple of weeks. If you haven’t got an airtight jar, a plastic container will do. Soaked fruit can also be frozen either in a plastic container or in freezer bags. If you freeze in bags, try and remove as much air before tying the bag up.
