Stacking advice please

If I’m doing a 4 tier wedding cake am I still safer to put a fruit cake as the bottom tier, or will it be ok to stack all sponge cakes ensuring of course I use the plastic dowels as Paul teaches to support each tier.

Hi ctennant

It is better to have larger fruit cakes as the lower tiers because of the weight. Sponge cakes can then be stacked above using the stacking method taught by Paul in the tutorials. Hi, I recently did a 3 tier wedding cake with the 2 bottom tiers in sponge – all properly dowelled – and the top tier fruit cake. Did not experience any problems at all. They were a 10, 8, 6.
