Stacking friut cake

Can anyone advise please. If I do a bottom layer of sponge cake and attack it properly with the 9 dowels that Paul advises would it then take the weight of a friut cake. I want to do a 10″ sponge cake and then a 6 or 7″ friut on top

Hi Ctennant

It isn’t advisable to stack fruit on top of sponge cake, it will be too heavy and start sinking down despite being properly doweled. What you could do is have the top tier as a decorated dummy, and have the decorated fruit cake waiting in the wings. After the symbolic cutting, the cakes get whisked away to be sliced so no would know that it wasn’t the fruit cake on top. Better to be caution than have a disaster. Other options, you could have a stand which displays each tier individually. Separator stands are also available for hire from some local decorating stores and online. Hope this helps.
