Hi there

Im doing a two tier cake 9inch on the bottom and a 7 inch as the top tier. I was wondering if i needed to use dowels or can i just ganache it on top?

Absolutely, it must be dowelled regardless of size. A couple of years ago I didn’t dowel a styrofoam tier which was quite laden with decorations. I didn’t think it was particularly weighty but the thing just sank into the bottom tier. I had to learn that one! x
