Storing at room temperature

Hello, I’m looking for some advice on what fillings/frostings can be stored at room temperature. I’ve been asked to make cupcakes with strawberry jam center and a white frosting, preferably a buttercream or marshmallow frosting..
But they will need to be stored at room temperature for a minimum 2 days and I would love some clarity on if it’s safe (which I would assume as jam is a preservative, but maybe some are better than others) and also will I have any problems with frosting melting etc..

Any extra advice is always welcome,

Hello pixrawr

The fillings and frostings which you have mentioned will be fine at room temperature for a few days. The ones to avoid altogether are fresh dairy creams, creamcheese, fresh fruit purees and some custards which need to be kept refrigerated. Besides buttercream, jam and marshmallow you can also use ganache or fudge fillings and frostings. Adding alcohol to fillings and frostings will also help with shelf life. As with all food products, anything left out at room temperature should be covered up either under a dome or placed in a box or wrapped in clingfilm.
To prevent frostings from melting, store your products in a cool environment away from any heat source such as direct full sunlight coming through windows during summer weather or hot rooms such as kitchens. If your home is exceptionally warm, running a fan can also help. The best solution would be to store frosted cakes in a larder fridge if you have one.
