Doesn’t keeping the cake in the fridge or freezer make it really dry?

You’re quite right. storing cakes in a fridge does dry them out but not if you freeze which actually helps keep cakes moist. If you look here http://www.cakeflix.com/questions/freezing-cakes there’s an answer from David which is very helpful.
