Hi,

I’d really like to start introducing blown / pulled sugar work into my cake designs, but I’ve been struggling to find anywhere in Scotland that offers this tuition … is this something you might introduce in the school in the future, or do you know anywhere in Scotland that offers these types of classes?

Hi Louise, there is a chef in Scotland who does it, his name is Willie Pike (just google him and you will get his website). The course info is out of date but if you drop him an email he will be able to tell you of any courses on the go!
