Sugar shards

Hi. I am making a frozen cake for my grandaughter. To make the sugar shards I need corn syrup, as a substitute could i use golden syrup? Or would it affect the colouring as its not clear. I can not get hold of corn syrup TIA

There are tutorials in youtube if you search ‘ how to make sugar shards from regular sugar’.The colour doesn’t look too bad at all. Golden syrup will change the colour, by how much I don’t know. The clear substitute for corn syrup is liquid glucose which can be found in the baking aisle of supermarkets.
I don’t know where you are based. If you are in the UK some Tesco supermarkets stock corn syrup. It can also be purchased online if have time for delivery.
I know a lot of people now use isomalt which comes ready coloured in sticks or cyrstals.

Hi madewithlove , I tried tescis but no where hear me has any. I’ve watched the you tube on it. I might experiment with the syrup, see what it looks like. Thank you for your help

I haven’t tried it myself but I believe you can melt Fox’s glacier mints!

Aha doodlecake I was going to suggest the same. Got my hubby to get some last night and was going to try it out today. @ Lesley4 you need to crush them first. Place glacier mints under a tea towel and bash with a mallet.
Place parchment paper in a shallow tray and spread the crushed mints to make a sheet. Place in a low oven to gently melt. Keep an eye on it because it can catch easily. Once melted leave to cool, but not cold then cut into strips with a sharp oiled knife. If it can be handled ( be careful as it will be very hot) you may be able to cut strips with scissors, if not let it cool and break into shards. You could mix a little colour to the crushed mints before placing in the oven. As with doodlecake, I haven’t tried it yet but I have with coloured boiled sweets for stained glass windows, got my head in the tennis finals! will try it later.

EDIT

If you’ve got a silicone mat it would be better than parchement paper. Use a little spray oil on the parchment if you don’t have the silicone mat.
