Sugarpaste flowers on fresh cream…

Hi I’m going icing a cake with fresh cream and I want to put a couple of sugarpaste flowers on top. Is this ok to do?

Hi, as miwl says, the sugar paste will absorb the moisture from the cream if left on for any left of time. You could try a trial run by giving the underside of your flowers a couple of coats edible glaze, let them dry and sit them on some cream to see if it works.

Because fresh cream has so much moisture it will make sugar flowers soft and droop if left on too long. The moisture will melt the sugar making a sticky mess. If you place them on at time of presenting the cake they should be ok just for a short time.
