sugarpaste flowers

Hi

I am making a three tier wedding cake covered in daisies. The bride would like the daisies to be edible and so I am reluctant to use petal paste which whilst edible I find dries very hard and doesn’t taste that great either! I made some with sugarpaste but I find that now its dried out a bit, and because the daisy petals are quite delicate, its very brittle and the petals break off far too easily. Any suggestions please? How about gum trath or half sugarpaste/half petal paste?

Petal paste, gumpaste and flower paste are more or less the same thing. Items made from these mediums although ‘edible’ dry very hard and brittle. Half sugarpaste and half flower paste is gumpaste which is also used for making models and flowers. Gum tragacath is a very strong powdered gum used for adding to sugarpaste to make gumpaste/petalpaste/flowerpaste. It is similar to tylose and cmc powders but stronger. You could make the daisies from modeling chocolate, they will stilll set up but would be more pleasant to eat. I would suggest buying ready made modeling chocolate from Squires Kitchen. There are many modeling chocolate recipes online using candy melts which tastes really horrible. Best to buy the geniune article or use eating chocolate if you’d like to try making your own.
