Hi Eeman

In the tutorials Paul uses Renshaws roll out icing. He has used other makes like Satin Ice, Fondarific and Carmas Massa Ticino Tropic. The Carmas Massa is especially formulated for hot humid climates.
There is some information about the product here http://fromscratchsf.wordpress.com/2011/09/05/fondant-massa-throwdown/
Some of the designer pastes are expensive and not easily obtainable. I find adding a little tylose powder or gum tragacanth to the icing helps strengthen it so lessening tearing. I use a level teaspoon to 500gm of paste in hot weather which helps to make the paste more manageable. Knead it in and leave the paste to rest over night before using.
