How can I make tassels to hang from the bottom tier of the cake so there are strong enough but supple enough at the same time ,so they don’t break , The client will be picking up this wedding cake themselves, this is a three tier cake with the middle cake been a double barrelled one any advice would be appreciated

Most mediums will harden, that’s including modelling chocolate. However you could pipe strands using white edible lace which remains flexible for a very long time. All you have to do is make up the edible lace powder as per instructions, pop it in a piping bag with a small nozzle and pipe away until you have enough strands to gather up for the tassles. I believe it’s only the white edible lace which remains flexible but you can put a colour over the top and it will still remain soft. There are lots of tutorials on using edible lace, have a peek here:

The gold edible lace becomes brittle but if you lay down a layer of white first and then a layer of gold over the top the white helps it remain soft.
