Tassles

How can I make tassels to hang from the bottom tier of the cake so there are strong enough but supple enough at the same time ,so they don’t break , The client will be picking up this wedding cake themselves, this is a three tier cake with the middle cake been a double barrelled one any advice would be appreciated

Hi Coll123

Most mediums will harden, that’s including modelling chocolate. However you could pipe strands using white edible lace which remains flexible for a very long time. All you have to do is make up the edible lace powder as per instructions, pop it in a piping bag with a small nozzle and pipe away until you have enough strands to gather up for the tassles. Have a look at this tutorial in the following link:

I believe it’s only the white edible lace which remains flexible but you can put a colour over the top and it will still remain soft. There are lots of tutorials on using edible lace, have a peek here:

The gold edible lace becomes brittle but if you lay down a layer of white first and then a layer of gold over the top the white helps it remain soft.

Please let me know if the information helps.
