i wanted to make Pauls chocolate shard cake but am making a carrot cake so will be covering it in white chocolate ganache as I think it will best suit the flavor of the cake and also use white chocolate shards. When you temper white chocolate, do you temper the chocolate the same as for dark or milk chocolate?

I’ve never tempered chocolate, but there are nice clear instructions for white chocolate on the popsugar site, which might help.
