Three peaks cake.

I have watched the tutorial which I love and have tried to make my own modelling chocolate several times as it is expensive to buy ready made, but can not get the right consistence to be able to roll and wrap a cake. Can I use chocolate sugar paste instead?

I don’t think chocolate sugar paste would work. Sugar paste will be heavy, it might crack and won’t hold it’s shape + it won’t taste as good.
I don’t know which recipes for modelling chocolate you’ve tried, if you look here http://www.cakeflix.com/questions/making-modelling-chocolate you’ll find a link to another site which offers lots of help with trouble shooting.
And if you put ‘modelling chocolate’ in the above search box you’ll come across other comments and some recipes.
Finally try not to over handle your paste, the heat from your hands will make it melt making it hard to roll out for wrapping.
If you’re using dark paste use cocoa powder for rolling out and icing sugar for white. if you can roll out on a really cold surface that too should help. Hope this helps a little.
