Tiered wedding cake

I have been asked to create a 3 tier wedding cake. Only ever having done single tiered cakes am now starting to panic and wonder why I ever agreed to this. I would very much appreciate any advice on whether or not the cake boards for the 2nd and 3rd tiers should be drum boards or basic thin card bases. Any other advice would be greatly appreciated. 🙂

Hi clan

The best advice to give would be to view all the tutorials where Paul stacks cakes. Have a look in the wedding
cake section. Usually only the bottom tier sits on a cake drum and the upper tiers on cake cards. Paul gives
very clear instructions in the tutorials how to prepare each tier from icing the cakes and boards, dowelling each tier and stacking so that the tiers are secure. If you follow the tutorials you won’t go wrong. Please don’t worry, you’ll be fine. Everyone gets the gitters with a first tiered cake, just take your time, don’t stress and all will be fine. Hi, thanks for your quick reply. Could you possibly answer 2 more queries for me? When I dowel the 2nd tier to the bottom and 3rd to the second, do you creat the holes in the cake card before you stack or just push through, if the latter, does this not damage to the cakes? Secondly, probably me just being thick, but is there a specific wedding cake section in the on-line course section or did you mean to watch the tutorials of the eddying cakes that appear there? You can probably guess from the time that I’m sending this that I’m worried .

The pink exploding cake in the beginners section is a good place to start. You can follow any of the wedding cake tutorials too eg the rose wedding cake, the bride and groom wedding cake just as starters. Each will show
you step by step how to ice, dowel and stack. There is no need to make holes in the boards, the dowels are inserted into freshly iced cakes which are soft and no damage is caused. Each dowelled cake is left to dry overnight before stacking. Use either royal icing or ganache to secure each tier. I realise you are worried but there is no need to. There are lots of us here to help and reassure you. Watch the tutorials and post again if you need more help, most of all don’t stress. x
