Hi Paul

If I’m making your chocolate cake with ganache in three tiers with the sugar paste and all, how long before the time is it safe to make it? How long will that cake stay fresh? Is three days from start to the actual event too long?

The moist chocolate cake has a shelf life of 5 days although it does stay good for longer.
