Tips on using novelty tins

Hi all, one of my customers has ordered a Wilton shaped tin (truck) but has asked me if I will make the cake for her, which I’m happy to do, but I haven’t used a shaped tin before so just looking for any tips on greasing, getting it out the tin and covering without losing the detail etc?

Yep they can be tricky! You need to grease them very well and dust quite liberally with flour. Tap out the excess flour and you’re good to go. When baked run a palette knife around to loosen the cake and give it a couple of taps on the counter. Have ready two cooling trays covered with parchment paper, one for flipping out of the tin, the other to upright it from the first tray so the design is face up and you won’t lose the detail. I’m not sure whether you know but to decorate, it is best with a star nozzle and butter cream. I’m probably not describing this properly, please say if I’ve confussed you. First time I used one was for the motor bike tin, you’ve never seen such a mess and wasted ingredients, but we live and learn!

I’ve certainly lived and learned on this one! Greased with trex and flour and also lined the the flat back of the truck and cake came out no problem. But it’s taken way longer to decorate than I thought and also forgot to factor in the extra cost of such a large board and box and the extra sugarpaste needed to cover it when I quoted the price. I’m sure there was also an answer here from Bev, which I can’t see now, but I also had to use sugarpaste for mine and I got there eventually 🙂

I seem to remember setting this link http://www.wilton.com/shapedpans/ when you first posted your question. Seems to have disappeared with the site overhaul (and other things). Did you see it? Thought it would have been helpful because it’s about techniques.Perhaps it got lost in the aether! I don’t know where Bev’s answer is either. I can’t believe you were brave enough to fondant the truck. I used the nozzle and BC on the motor bike, still shudder when I think about it.
