Hi
I made some chocolate truffles with ganash that I made on Wednesday evening last week. The cake crumbs were taken out of the freezer this morning. I have quite a bit of the mixture left over, which is in a container the fridge. Can anybody tell me how long the mixture will last please? Thanks x

If you froze the mixture on the day of making the cake your mixture will be good for approximately 5 days. The shelf life would be the same as for a fresh cake depending on what the cake recipe was. Madeira has the longest shelf life, two weeks from baking to eating, some mud cakes between five and ten days. If you’ve added alcohol to the mixture you can extend it for a few days more. The mixture will need to be kept refrigerated and can not be refrozen. Hope this helps.

Thanks very much. It’s strange though that chocolate ganash can last up to three months but yet when cake crumbs are added it reduces the life of the combined ingredients. I imagine it’s due to adding the crumbs. Would it be too late to add alcohol now in order to extend the life of the mix? Or is it too late? Thanka veyr mcuh. x
Ganache will last in the freezer for up to three months and more and so will cake. It’s just once the defrosting process begins both start to age. Different people have different views on how long they can keep ganache and cake in their fridges and counter tops, it doesn’t necessarily mean the product hasn’t began degrading.
If the mixture has been in the fridge add a table spoon of 40% proof alcohol, the mixture should be ok for a few more days but keep an eye on it for smell and any mold growth. x

Thanks very much. Can I just check how long I can how long I can store freshly made Ganash in the fridge? Paul says in the chocolate ganash video you can date and label it and it will keep for 2 – 3 months in the fridge. Or did he mean in the freezer? Also does white chocolate Ganesh last the same length of times?
Just one more question if you won’t mind is a ganash and fondant iced cake safe for a pregnant lady to eat?

I should think Paul means in the freezer and a couple of weeks in the fridge. I certainly would not eat three month old ganache which had been stored in the fridge. White ganache can be frozen for the same amount of time. They should both be properly stored, wrapped in freezer bags and held in airtight containers. This will prevent freezer burn and eliminate any absorbtion of food smells. Many pregnant ladies have consumed my ganached, fondant covered cakes without mishap. There is nothing to prevent a normal, healthy pregnant lady from eating a ganached cake. There is risk in everything we eat. Food which has been carefully prepared, stored and handled under hygienic conditions will reduce that risk. I’m not an expert, this is just my own opinion and of course my own experience. I do hope other members will contribute their opinions and expertise so you have wider information other than what I have to offer.
