Uneaten fruit tiers
Hi I found this site after baking and icing a 3 tier fruit cake for my Niece’s wedding. I ended up baking a further 2 tiers of Paul’s chocolate cake and so we are now left with a 9 inch and 6 inch decorated fruit cake. I plan to recycle for Christmas but one has dowels in and I’m not sure if it will store ok. Should I freeze the cake and recover with marzipan and icing in December?

Welcome to the site!
Your fruit cakes will be fine for Christmas and beyond. However I would be inclined to remove the dowelling plus all of the marzipan and icing as you have wisely stated to start afresh in December.
Wrap the cakes up in several layers of parchment paper, cling film and foil in this order and then place them into either airtight containers or cake boxes. Seal cake boxes up with strong tape. All this wrapping helps to protect the cakes from freezer burn, the smell of other foods and from being bashed about.
