Hi, customer has just changed her date for cake. the cake is ready, 2 tier vanilla sponge with buttercream filling covered in fondant. will this cake still be ok for one week or will i have to do another one.?

It depends on the recipe, when you baked the cakes and whether they had been frozen. Sponge cakes normally have a shelf life of five days, anything over that will see a deterioration in the cakes and freshness is not guaranteed.
If you have a contract with your customer for this collection date and they have given less than reasonable notice of cancellation you are still entitled to be paid since it was not because of a fault on your part.. Not knowing what terms and conditions you have with the customer it’s difficult to advice. If the customer wants fresh cakes made it would be a completely different order, not a replacement for this one and would also have to be paid for.

As this is a good customer I am going to make a fresh cake for her.
As I live in quite a small area I think this is the best way to deal with the problem,
I have also decided to give original cake to the homeless ,so there is no waste involved.
