Using Ganache quickly and the same day

HI there,

I have been asked to make a cake for wednesday (Michael Kors handbag) i need a white chocolate ganache however i need to bake, carve and crumbcoat/cover this evening after i finish work at 5pm.

if i make the ganache as soon as im home whats the quickest time i can us this for?

also if this is not possible and i have to do it tomorrow night how long til it sets until i can put sugarpaste on?

Hello Charlie

You can use the ganache as soon as it is cool and a spreadable consistency. The ganache can be placed in the freezer for approx 15 minutes to help it thicken. It will also help if your cake is chilled. A freshly baked cake will be very soft with lots of crumbs. Once the cake is cool, wrap it up in some clingfilm and place it in the freezer to firm up. You’ll find the ganache will set up much better on a chilled cake than one which has not.
Follow all Paul’s instructions and there is no reason why you can’t achieve a decorated cake in one day.
