Using white chocolate ganache

Hi
Does white chocolate ganache have to be left in the fridge overnight to set or can it be used as a coat under sugarpaste at the time of making provided it has cooled right down ?

As long as the ganache is the right consistency for crumb coating it can be used straight away. White ganache may need to be refrigerated for about 20 minutes to help it along. Follow Paul’s tutorials after each coating ie in and out of the fridge after each covering. If you’re experiencing this hot weather, you will get better setting results if you increase the chocolate to cream ratio to 4:1. Hope this helps. x
