Is there a vegan ganache recipe which sets hard to cover with fondant. Thank you.

Use a plant based double cream such as Elmlea or another similar brand. Google search ‘vegan double cream’ to view suppliers.
I have used Elmlea as a sub for dairy and it works just as well. You may have to slightly increase chocolate quantity, especially for white ganache. Try a small amount first to get a feel for texture.
