water bowl of some sort at bottom of oven for moistness

hiya some recipes say to put a bowl of some sort at the base of the oven for moist fruit cakes but can this method be used if baking sponges to 🙂 xxx

It can but you have to be careful that it doesn’t cause too much steam as this would make the centre sink xx

Hi annabel

I’ve never done this for light sponge like Victoria but certainly for madeira sponge cake which is much more dense it can help with moistness and also help to reduce sides and corners of cake from over browning. x

I have been doing this with all my cakes -it helps to stop the dome. However last time I cooked a really deep version of Paul’s cake it did sink a bit, perhaps this was why!
