Wedding Cake Flavors

HI I was asked by a friend to do her wedding cake and am in a panic now. where i come from we do almond cakes but she wants an american/british type of cake. does anyone have any suggestions for flavor combinations. she does not want chocolate but left it in my hands to decide and i have a mental block plus i am freaking out! Help please

Almond cakes, mmmm yum! You could still do an almond cake tier and combine it with other flavour tiers, you certainly don’t have to make chocolate. How about lemon sponge, vanilla, coffee, carrot, rich fruit cake, coconut and lime, Almond and orange. Stop freaking out, take a deep breath x and take a look here

You can also google wedding cake flavours for lots more ideas. Keep it simple, don’t offer anything beyond your skill levels and that way you’ll produce the best cakes you can. My personal favourites are the Jane Hornby wedding cakes, virtually all begin with a simple creaming in method, quick and easy reliable recipes.

have you tried her vanilla cake? can i replace golden caster sugar with normal sugar? how long does the cake keep once covered in sugar paste?

I baked her vanilla cake last week, just adapted it for coffee flavour. You can use ordinary caster sugar but the taste will be a little different. Golden caster sugar is unrefined and has a distinctive tang which not everyone picks up on. The cake keeps for 5 days, however if you use the simple syrup it will keep moist for a couple more days + the sugarpaste will be locking in the moisture.
