Wedding cake on the 28 th December

Hi I have a wedding cake to make on the 28 th of December , how far in advance can I decorate the cake, and it still be fresh it is Paul’s chocolate cake then covered in moderling chocolate. Thanks elaine

David’s answer is the 5th one down below my own. Were you able to open the link?
You can get the shape of the big cake with dummies but I think it would still involve a certain amount of carving. It may be possible to buy a bigger cone which would create virtually all of the height, try here for the dummy, this company will also make bespoke items if they haven’t got exactly what you want. You could just make a great big cone out of card the same as Paul does in some of the tutorials. I hope you find David’s answer, it’s very useful.

Are you baking the cake on the 28th or is the wedding on that date? Paul’s cake is very, very moist and although it is given a 5 day shelf life it does keep for longer and stays moist. The shelf life can be extended to give you a few more days, David has an answer here http://www.cakeflix.com/questions/lengthening-the-shelf-life-of-cakes which will I’m sure be of help, just scroll down until you see his name. If you need to scale recipes up or down you’ll find a ready reckoner and the cakeometre here http://www.cakeflix.com/blog/how-to-work-out-what-size-cake-tin-to-use they’re both really easy to use if you get stuck for measures.

Thank you the cake is going out on the 28th, I have made Paul’s cake lots of times, and yes it is very moist everyone loves it, I don’t seem to be able to see David’s answer. Iam doing Paul’s 3 peaks chocolate wedding cake. I would like to do the big cake all dummies as the bride dose not need all the cake will I still get the same shape if I do this? Thank you very much for your help elaine x
