what sugarpaste does paul use?

does anyone know what sugarpaste paul uses in the reindeer tutorial…and is it the same as fondant in Australia? how does he get it to be so stiff?

Hi Sandilee,

Thanks for getting in touch. He often uses different kinds of sugarpaste however he mostly uses Renshaws sugar paste, which has quite a stiff consistency.

As mentioned by Danielle Paul uses all types of sugarpaste. Howerver in both the reindeer tutorials he has used Renshaw’s. In the baby reindeer cake he has used teddy bear brown , in the Rudolf reindeer he has used chocolate brown sugarpaste and aslo brown modelling chocolate.
If you are having problems with soft sugarpaste, knead in approx one teasppon of tylose powder to 500g of paste to help stiffen it up a little. Knead the powder in and let it rest for half an hour or so. Don’t add more than that amount other wise you may end up with gumpaste. However if your climate is really hot and humid you can add a tiny bit more. In Australia it appears the Bakels brand is most popular for taste and consistency.
