what to do with cadburys compound chocolate
Hi there.. wondering if somebody could give me some ideas please? I thought i got a great price for a 5kg box of cadbury dark chocolate buds.. so i bought them and when i got them home, i realise they are compound chocolate buds.. 🙁 i’ve never made cakes with compound chocolate before.. will it impact the taste noticeably if i did use them? If so, what else can i do with them now that i have 5kgs sitting there.. ?

Failing that just use them up as you would real chocolate. Lots of people use compound for baking. I wouldn’t use them in delicate recipes like mousses but you can still make ganache, chocolate cake, cookies and chocolate decorations. Perhaps use some to make dark modelling chocolate. I find flowers made with dark modelling chocolate take lustres colours beautifully. Have a look at the chocolate wrap cake tutorial to get inspiration for a few dark chocolate decorations. On their site Cadbury’s have recipe ideas for their range of chocolates. To most people chocolate is just chocolate and many can’t tell the difference between compound or couverture unless they eat fine chocolates all the time. I really wouldn’t worry too much. Just use them up as normal. Bake a small cake as a trial for taste, ganache can be flavoured with oil base flavourings.
Yet again, you come to the rescue.. thank you so much Madeitwithlove .. i really appreciate your advice and now i think that’s a great idea.. i haven’t ever made my own modelling chocolate yet, so now might be a good time to try.. I will no doubt check out the tutorial you mentioned and make a few cakes out of the chocolate too..
