whats the story behind the wedded couple bringing out the frozen cake to celebrate

hi can anyone help me understand about a wedding cake once the couple are wed and having a tier kept and frozen then brought out to celebrate and would this still taste good for them also is it a particular flavour xxx

Hi annabel

Traditionally the top tier of a wedding cake, which must be a rich fruit cake is kept to celebrate the christening of the couples first child. Rich fruit cakes if stored properly ( not necessarily frozen) can be preserved for many years. This can not be done with sponge cakes or mud cakes as these cakes can be frozen for three months only, after which time their texture and taste will be greatly compromised.
