White chocolate buttercream

Been asked for a white chocolate cake with white chocolate buttercream. For the cake I am just going to grate some white chocolate in to my usual cake mix.
What ratio of chocolate to buttercream would be advisable?
Personally I don’t like white chocolate so this just sounds really sickly to me 🙂 xx

White chocolate buttercream can be very sickly. However, if you add to it a little lemon juice along with vanilla bean paste, the taste is much enhanced.

I use the following recipe enough for filling a 3 layer, 8 inch cake:

100g melted white chocolate
140g unsalted butter
70g icing sugar
2 tea spoons vanilla extract

Method:

Gently melt the white chocolate and set aside to cool.

Beat the butter until white and creamy. Add , in stages the icing sugar until completely absorbed. Add the cool, but still fluid chocolate and beat well to combine.

This can be multiplied for larger quantities.

The resulting buttercream is soft, silky and not over sweet. It is only suitable for filling and not for covering.
