White Chocolate Shard Cake Ingredients
Is the amount of white chocolate listed separately in the ingredients for the white chocolate shard wedding cake in addition to that required to make the ganache? Thanks!

The ingredients list http://www.cakeflix.com/online-cake-decorating-courses/white-chocolate-shard#ingredients is asking for 2.5k white chocolate, 2k of that is for the ganache and I guess the remainder 500g is to be tempered for the white shards. Hope this helps.
Usually to fill and cover, however the quantity for the shard cake doesn’t quite tally with the chart, you may need more than the tutorial suggests, just play it by ear. Depends how much filling you like, I make alternative ganache fillings so I just make enough for covering. I can’t remember how many and what size cakes the tutorial has, might be an idea to check individual sizes against the chart. You should have plenty for attaching the decorations, if not knock up a little bit more, I wouldn’t exceed much more than 100g ganache, shove it in a piping bag it’s so much easier when attaching decorations. Just warm the whole bag up in the micro wave for 5 seconds on low if it starts to set up too much.

Thanks, that’s really useful! I have another question. do we use the ganache to fill and cover all the cakes or just to cover them and attach the decorations?
