Why did my cake crack and Crumble
Hello there cake lovers. I hope you can help. I made Paul’s polka dot bag cake however by the time I needed to deliver the cake the whole cake had cracked and crumbled. I used a cake tin exactly the shape of the bag and baked two cakes to make it big. I made it for a friend’s daughter and only charged for ingredients as I am still learning. She had asked for buttercream and jam in the middle, so I did that and used white chocolate ganache on the outside to make it smooth when covering the cake. I also used cova paste which I had never used and was reluctant to, because when I googled it, I read someone had a cracked and crumbled cake after using it. However after reading so many success stories about it here, I decided to use it. I also used sugar syrup in the cake to make it moist. I started covering on Friday night and did the decorations on Saturday evening only to wake up to a cracked and crumbled cake which cannot be salvaged on Sunday morning. I don’t want to disappoint, so I am making another one. Will someone please be able to tell me what could have gone wrong? I have also made the cake previously and had used buttercream and jam and nothing went wrong . Many thanks in advance. Will appreciate all comments.

I’ve never used this paste so really can’t say why. I know members here seem extremely happy with it’s performance. General consensus online suggests that the paste is too soft and attracts more moisture. One person has commented that it’s almost like the paste sucks all the moisture out of the cake. It’s the paragraph just above the cake picture. This may be the one which you have already seen. I see mostly complaints about the the over soft nature of the product and how it cracks. I have also read that there are new use instructions which ask cova paste users to knead very well to avoid cracking. This information is posted in an ebay advertisment when googling, however once in ebay there are lots of cova sellers and I can’t find the seller who has made that statement. I hope other members will be able to shed some light too.
I use Satin Ice which never gives me any problems. x

So I will stick with the Asda sugar paste. Apart from it cracking sometimes I have never had any problems with it. I have made another cake and will be delivering it soon. I will try Satin ice soon. Hi there, I’ve never heard of cova paste. I generally use Asda’s own fondant icing, but if I’m covering a big cake that is a different colour than white I order the coloured sugar pastes from Windsors Cake Craft in Warrington, Cheshire. They stock a large range from Renshaws to Squires.
Hope the second cakes turns out well. It’s dreadful when things like that happen after all the hard work that’s gone in to it.

Hi Donna thank you so much. I know after all that hard work, I nearly started crying when I saw the cake Lol. I can laugh now but it Wasn’t funny at the time. The other cake was fine and just to be on the safe side, I took it to my friend who is a professional cake maker and we covered it together and she dowelled the bag. I didn’t even know that you could put dowels in a bag. I wish I could upload all the photos. Happy endings in the end. Many thanks again for your response. I absolutely love this site. xx
