why is my sponge cake yellow/green?

Hi, everytime I make a sponge cake its tastes lovely but its got a really yellow colour to it sometimes with a green tint and doesn’t look very appetising, where other cakes seem to be a lot lighter (really light yellow, virtually white). I use 8oz flour, sugar and marg, 4eggs and a splash of milk if its dry! was just wondering if anyone has any advice? thanks xx

Hi,

If you beat the butter/marg with your sugar until it is very pale, it takes a while depending on how yellow the butter/marg is,add the eggs one at a time,mixing thoroughly before you add the next egg, then your flour,i add a tsp of vanilla extract, and then the milk,mix gently on low speed till combined. hope this is of help….
