Here is David’s portion chart for the different size cakes http://www.cakeflix.com/blog/how-to-decide-on-the-cake-portions The cakes are carved so the loss has to be taken into consideration and also the size portion which is likely to be served. There is a fair amount which is lost. I think if I was making the wonky I would calculate for one size down ie the 10″ would probably yield enough portions for an 8″ round and so forth. I haven’t made this cake so can’t say this is definite, however looking at how much is taken off I’d play it safe. Hopefully members who have made it will be able to advice better.

Thankyou once again for your advice. Just one more question… would you use the same method to calculate the ganache quantities?

I probably would do that and it doesn’t take long to make some more up if you find you’re running a little short.

Do you have Paul and David’s book? there’s a wonky cake in there, I’ve just had a look at the amount of ganache (1.6k), it works out about the same as I would use if making following the chart. A lot also depends on how thick you like to ganache.

I haven’t got the book. I borrowed it a while back from the library and obviously its gone back now. I worked the ganache quantities out to the same amount as you did, earlier this morning using the chart on here but wasn sure if the amount was right. I need a wonky cake to serve 60 people so wasn sure wether to bake the cakes as iv done before in my Lakeland tins or to make pauls wonky cake to get that tapered shape to each tier. Must say I prefer the look of pauls cake much better but I think it yields less portions than mine. Thanks again for your response x
