Working with fondant

Hi Paul,
First of all your cakes are amazing and love you tutorials. Can you help with a fondant problem? When ever my daughter or myself tries to cover a cake with fondant, it cracks and breaks. We have tried lots of different makes of fondant, but still have the same problem. We have three wedding cakes to make and we would like to try and get it perfect. Could you please tell us where we are going wrong? Also, what is the best make of fondant to buy? Hope you can help?

Hi Linda

Fondant can be a real pain when it acts up. The are several member answers on the site which may help. Please click on threads which are relevant to your question here:

Paul has used several different brands of fondant. He does seem to favour Carmas Massa Ticino for wedding and special celebration cakes. Difference between fondant brands

Finding the right fondant is really trial and error. It’s a case of keep trying different ones until you find a brand you like. Some suppliers offer sample packs at reasonable prices.

There’s quite a lot to read in all the links but I hope you will find some of the information useful.

Hi Linda

I used to have the same problem, but since watching one of Paul’s tutorials, I’ve now started using the Massa Ticino fondant and I can’t recommend it enough. It’s probably not the cheapest on the market, but as it makes covering the cakes so much easier and quicker, it’s money well spent!
