Cake in freezer

Hi
For how long moist chocolate cake and vanilla sponge cake can be freezed and stored . I have crumbs of both cakes two months old , is it fine to make truffles out of them for party. Also, if yes , what will be the shelf life of truffle

Cakes can be frozen for approximately 3 months without the texture being comprised. However, if you defrost the cakes to make cake truffle pops they can not be re frozen. The truffles will last approximately 4 – 5 days in the fridge before beginning to stale. I expect the chocolate cake will stay fresher longer than the sponge so worth keeping an eye on. If you only want to make a few truffles don’t defrost the whole cake. Take a bread knife and cut off enough to defrost and place the remainder in the freezer until you want to make more truffles.
