Cake with fondant

Hi
I want to try to make the car unicorn, l made the base and going to fill it with buttercream. Then start with the fondant.
My question is
Can you put the cake with fondant on it in the frigde over night.
And if you make it the same day can you put it in the fridge when done.
I have heard that it will crack if you put it in the fridge.

Hi Sandra

As a rule of thumb, it’s not advisable to refrigerate an iced cake. This is because of the moisture in the fridge causes the icing to become wet and sticky. However, some people do, do it by placing the covered cake in a sturdy cake box or a double box which is then sealed and wrapped in a heavy-duty plastic bag. This will protect the icing from becoming too wet. There will still be dew on the cake when it is brought out to room temperature. The cake should be left to dry out of the box without touching the icing. Once dry, the icing will appear shiny. Dusting it gently with a small amount of cornflower or icing sugar will reduce the shine.

Edit: Cake which contains buttercream as a filling does not have to be refrigerated. It will fine at room temperature stored in a cake box.
