Hi Hilaryb

Unfortunately fondant iced cakes should not be placed in the fridge for long periods. The icing will attract moisture, sweat and melt, spoiling the decorations. Some people do refrigerate by covering the cake up really well then placing in a box. The cake has to be brought to room temperature slowly still in the packing and mustn’t be touched until completely dry. The icing can also dry shiny with possible water marks in places. I don’t think it’s a risk worth taking. I’ve seen tutorials in youtube where the demonstrators place iced cakes in fridges, these have low humidity factor and do not affect the fondant. I’m sure other members will be able to offer more advice.
