candy stripe cake help

Hi,

I’m a beginner and have made a few cakes for friends etc. I’ve been asked to make a square 2 tier cake with a candy stripe bottom tier and an explosion top tier with a bow. The cake is for 50 – 70 people so I was thinking a 12in and 7 in would that be ok??
Also if I use Paul’s panel technique to ice the bottom tier could I add the candy stripes to the panels and add them all together?

It will be easier to add all the candy strips down on some greased parchment paper and lifting them up along the panel. Lightly grease the panel with a little trex to help adhere the strips. Once smoothed down, pull off the parchment paper gently. This will help you keep the shape of the candy stripes. Hope this makes sense, if it doesn’t just post back.

A tip I saw recently for adding stripes was to flip the iced cake upside down on to parchment paper and add the stripes, that way you’ve got a neat top edge from the start and you’re cutting the excess away from the bottom of the cake where the cake card is and get another straight line. I haven’t tried it myself so couldn’t comment on the accuracy of it….!
